Quick and easy strawberry pie

I really like strawberry pie you know the kind that has a sugar laden glaze pour over a mountain of strawberries in a pie shell. I have two for you one with sugar and one without.

If you like homemade rolls but don’t have the time or the know-how, try the Spoon Roll recipe.

Strawberry Glaze

1 1/2 c. water

3/4 c. sugar

2 Tbls. cornstarch

1 small box strawberry gelatin

Mix water, sugar and cornstarch in a saucepan and bring to a boil. Boil for 2 minutes or until clear and thick. Remove from heat and add strawberry gelatin; stir until dissolved. Pour over the top of strawberries that fill a pie shell.

Sugar-Free Strawberry Glaze

1 1/2 c. water

2 Tbls.. cornstarch

1 small pkg. sugar-free strawberry gelatin

6 Tbls.. Splenda

In small saucepan combine cornstarch and water and cook until thickened. Remove from heat and cool slightly. Stir in Jell-O and Splenda. Pour over the top of strawberries that fill a pie shell.

Spoon Rolls

2 c. lukewarm water

1 pkg. dry yeast

1/2 c. oil

4 Tbls. sugar

1 egg

4 c. self rising flour

Mix by hand in order given. Batter should be like pancake batter, slightly lumpy. Pour into greased muffin pan. Bake about 20 minutes at 375 degrees . You can make this batter ahead of time and store it in the refrigerator and stir daily until you use it. So, you can make as many homemade rolls as you want.
