Lovely brunch menu

My favorite way to entertain is to have friends or relatives over for brunch. I am more confident about fixing eggs than pot roast. Following is my latest brunch menu that I made for my neighbors. The best bart about the recipes is that I made the Baked French Toast and the Scrambled Egg Casserole the night before.



1 ripe banana

1 ripe peach or nectarine (or fruit of your choice)

4 oz yogurt

1 Tbls. frozen pineapple juice concentrate (undiluted)

Makes a thick smoothie (add milk or juice to thin to preferred consistency) .

Baked French Toast

1 loaf firm bread

8 oz. cream cheese

1/4 c. maple syrup

10 eggs

1 1/2 c, half & half

8 Tbls. melted butter

Cube bread and layer half in a 9- by13-inch pan. Cut cream cheese into small pieces and scatter across the bread. Cover with remaining bread cubes. Mix eggs, half & half, syrup and butter together. Pour this mixture over the bread cubes. Press the bread cubes down to absorb the mixture. Refrigerate over night. In the morning, bake at 350 degrees for 40 to 50 minutes.

Serve with syrup, jam or powdered sugar.

Scrambled Egg Casserole

1 c. cubed ham

1/4 c. chopped green onion

3 Tbls. melted butter

12 eggs, beaten

1 (4 oz)can sliced mushrooms drained

Cheese sauce (recipe follows)

1/4 cup melted butter

2 1/4 cup breadcrumbs

1/8 tsp paprika

Saute ham and onion in 3 Tbls. butter in large skillet til onion is tender. Add eggs and cook over medium high heat, stirring to form large, soft curds; when eggs are set, stir in mushrooms and cheese sauce. Spoon eggs into a greased 13x9x2 inch pan. Combine 1/4 cup melted butter and crumbs, mix well. Spread evenly over eggs.

Sprinkle with paprika. Cover and chill overnight.

Uncover and bake at 350 degrees for 30 minutes or until heated through.

12 to 15 servings.

Cheese Sauce

2 Tbls. butter

2 1/2 Tbls. flour

2 c. milk

1/2 tsp. salt

1/8 tsp. pepper

1 c. shredded American cheese

Melt butter over low heat, blend in flour and cook 1 minute. Gradually add milk; cook over medium heat til thickened, stirring constantly. Add salt, pepper and cheese, stirring until cheese melts and mixture is smooth.
