Eat the cake of your choosing

Today seems like a good day to eat cake, cupcakes or pancakes – you pick.

Chocolate Chip Cake

1 yellow cake mix

2 boxes instant chocolate pudding

1 c. oil

1 c. water

1 tsp. vanilla

4 eggs

1 (12 oz.) pkg. chocolate chips

Chopped nuts, if desired

Mix all of above items in large bowl. Stir with a wooden spoon. Pour into greased and floured bundt pan. Bake at 325 degrees for 50-60 minutes.

Applesauce Cupcakes

1/2 c. margarine

1 egg

1/4 c. sugar

1-1/2 c. sifted flour

1 tsp. baking soda

1/4 tsp. salt

1 tsp. cinnamon

1-1/2 tsp. nutmeg

1 c. unsweetened applesauce

1 tsp. vanilla

1/4 c. chopped walnuts

Preheat oven to 375 degrees. Cream margarine until fluffy. Beat eggs and sugar; add to margarine and blend. Sift together dryingredients. Add to margarine mixture alternately with applesauce,

mixing well after each addition. Stir in vanilla and nuts. Spoon into 12 cupcakes pans sprayed with vegetable pan spray. Bake 15-20 minutes.

Banana Pancakes with Honey Butter

Pancakes:

1 c. pancake mix

1/2 cup water

1/2 cup ripe mashed bananas

2 eggs

1/2 tsp. cinnamon

Honey Butter:

1/2 c. butter

1/4 c. honey

For pancakes heat lightly greased griddle over medium heat. Combine all ingredients, mixing until batter is fairly smooth. For each pancake pour scant 1/4 cup batter onto hot griddle. Turn when pancakes begin to rise and edges look cooked. Serve with Honey Butter.

For Honey Butter beat butter at high speed on electric mixer until light and fluffy. Gradually beat in honey; chill.

Makes 8-10 pancakes.
